Grisaille

I have another question that nobody has really been able to answer adequately for me.

The grisaille. What's it for? Let me be specific. I know that it's useful if you'll be coloring using glazes and semi-transparent scumbling, but what about the case of someone like Ingres? I think he used the technique for his paintings (there is a grisaille version of his odalisque in the Met[?]) but if this is the case, he's definately going opaque in most of the flesh tones, which means that all the work was in vain. What am I missing here?
